This dessert is very easy to do and is a crowd pleaser. This recipe is for 6 people.
4 -5 tbsps Butter
2 tbsps Brown sugar
1 tbsp. Cinnamon
3 peeled ripe plantains (cut vertically)
¼ cup rum
Single cream
Procedure: Melt butter. Mix brown sugar and cinnamon, sprinkle some of this over cut bananas. Put bananas in butter on a moderate to low heat, cook until slightly browned. Turn once and sprinkle with remaining sugar mixture. Last, add rum. If you wish, flambé. Once the caramel is formed, add cream. * You can substitute plantains with mangoes and serve with a scoop of vanilla ice cream.
